Heart Healthy Roast Chickpeas

The first Friday of February is National Wear Red Day. It was established in 2004 by the American Heart Association to raise awareness about the number 1 cause of death in women – heart disease.

Heart disease and strokes kill one in three women everyday. But in most cases (upwards of 80%), they are largely preventable. Taking healthy steps in diet and lifestyle, along with regular check ups with your doctor can make a huge difference to improve your well being and avoid being part of these horrible statistics. It’s also important to know your family health history and share that information with your doctor.

Today I’m sharing a delicious recipe for a crunchy snack you might not have considered. Roasted Chickpeas (aka garbanzo beans). They are an excellent source of fiber and protein. Low fat. Vegan. Gluten free. And addictively yummy! I’m a huge fan of Penzey Spices, so I used one their spice blends that I love, but feel free to substitute your favorite combination of flavors. Sweet. Salty. Spicy. Anything you like.

Roasted Chickpeas

1 – 25 oz can chickpeas (also called garbanzo beans)

1 Tbsp olive oil

1 Tbsp spice blend of your choice (I used Penzey’s Sandwich Sprinkle)

Preheat oven to 400 degrees. Drain and rinse chickpeas. Thoroughly pat dry with a paper towel. In a medium bowl, toss chickpeas with olive oil and spices until fully coated. Spread out on a foil lined baking sheet. Bake for 25-30 minutes, shaking pan after 15 minutes to evenly brown all sides. Remove from oven and fully cool. Store in an airtight container at room temperature.
